As a general rule, your pizza turning peel should reach the back of the pizza oven with at least 20-30cm of the handle outside of the pizza oven to protect your hands from the heat.  Calculate the oven depth from the mouth and plus 20-30 cm.  That is your ideal turning pizza peel handle length.

The diameter of the pizza head should be around two-thirds to three-quarters of the size of the pizzas you are cooking.  For example, for 11-12" pizzas, we recommend a 7" pizza turning peel.  Also, for small portable pizza ovens, we recommend no larger than a 7" head size as generally, it becomes harder to manoeuvre the peel inside the lower height of the portable pizza ovens.
