The standard cordierite stone is a remarkable stone for cooking on below 400°C, however above this temperature, especially above 450°C the pizzas tend to burn on the cordierite stone which is why we recommend the clay biscotto if you desire to cook at Neapolitan cooking temperatures.

The Ziola reaches 500°C in just 27 minutes. This quick preheat time is one of the fastest available, so you’re ready to start baking in less than half an hour. No lengthy warm-up times, just efficient, high-performance cooking.

Like every pizza oven, the stone temperature drops when cooking a pizza. The Ziola has been designed with large heating elements that ensure rapid recovery between pizzas. For perfect base everytime, we recommend a 2-3 minute wait between pizzas for the stone to rebound to temperature.
